Pie with Grevena cheese and mushrooms

Equipment

  • 1 frying pan
  • 1 knife
  • 1 round or rectangular baking pan

Ingredients
  

  • 1 package rustic crust (6 sheets)
  • 500 gram. mushrooms, sliced and sliced
  • 1 leek cut into thin slices
  • 2 medium sliced onions
  • 2 onions cut into thin slices
  • 1 Homepage garlic
  • 2 Florina peppers cut into rings
  • 200 gram. ascending cheese from Grevena
  • 100 gram. slice broken with a fork
  • 1 teaspoon oregano
  • 2 tablespoons trahanas
  • salt
  • freshly ground pepper
  • 1/2 cup olive oil
  • sesame seeds for sprinkling

Instructions
 

  • 1. In a large frying pan, add some of the olive oil and once it is hot, sauté the mushrooms over high heat.
    2. Once the liquid has evaporated, add the remaining olive oil to the pan and sauté the onions, shallots, leek, garlic and peppers.
    3. Add the tomato and pepper.
    4. Add the mushrooms back into the pan, stir and cook a little more to evaporate the liquid.
    5. Add the cheeses and mix. Taste the filling and add salt if needed.
    6. Add the oregano and 2 tablespoons of trahanas to completely absorb the liquid from the filling.
    7. Brush a baking pan with olive oil and spread the first sheet of phyllo. Drizzle a little oil on the sheet and spread the second sheet. Spread half of the filling and place the third sheet. Spread the rest of the filling on top of it and finish by putting the remaining sheets, drizzling them with olive oil.
    8. Wrap the edges of the leaves.
    9. Cut the pie into pieces, brush with olive oil and sprinkle with a little water.
    10. Bake at 180ο for about 1 hour.
    11. It is ready when it is browned and has been removed from the pan.
