Bain marie (bain marie)

The term bain marie, which literally means "Marie's bath" in French, is a method used when the raw material is sensitive to high temperature and can destroy it. In this method the raw materials are placed in a vessel, which in turn is placed on top of another vessel in which water is boiled. The first vessel does not come into contact with the water, the water vapour simply heats the raw material. Materials that are delicate and need to be bain-marie are chocolate, couverture, eggs.

Procedure

  1. In a small saucepan, add enough water so that the second pan does not touch the water.
  2. Boil the water until you see water vapor.
  3. Lower the heat and place the other pan on top, which should be clean and dry.
  4. Place what you want to heat and melt and mix lightly with a silicone spatula.
