Sioux fritters or squirrel fritters of Crete

It is a traditional Cretan pasta, made from flour, water and olive oil. Their name comes from the way they are shaped, twisted.

"Skioufoufo" in the Cretan dialect means to turn. No rolling pin or machine is used but a twisting motion of the finger on the pieces of dough. They are easy to make, all you need is experience. They're served with burnt curd and grated dry cream cheese.
