A classic and favorite recipe for the Sunday table. Accompany it with good red wine and toasted rustic bread

Ingredients
1chicken
1kilo dried stewed onions (cockles)cleaned
1cupdry red wine
1cup olive oil
1 box tomato juice
1cupred wine vinegar
4-5granulesspice
2leaveslaurel
1 stickcinnamon
2clovesgarlic
1 tablespoonSugar
3cupvegetable or chicken broth
salt
pepper
Instructions
1. Boil water in a pot and add the onions. Leave them for a while and peel them easily and without tears. 2. In a saucepan, add the olive oil and sauté the chicken pieces. 3. Remove the chicken and add the spring onions, which we sauté until browned. 4. Sprinkle with the sugar, stir and add the vinegar and wine. 5. After they come to a boil, add the chicken, tomato juice, garlic, bay leaf, cinnamon and allspice. 6. Add the broth, season with salt and pepper and bring to a boil. Add more stock if necessary. 7. Serve with toasted rustic bread and good red wine.
