Bread with spring onions and feta cheese

A delicious and quick bread-cake, which can be eaten at any time of the day on its own or accompanied by another dish!

Equipment

  • 1 mixer
  • 1 knife
  • 1 cup

Ingredients
  

  • 230 gram. flour for all uses
  • 2 tablespoons baking powder
  • 3 eggs medium
  • 60 gram. fresh milk
  • 60 gram. olive oil
  • 1 cup slice of cheese cut into small cubes
  • 1/2 cup grated gruyere
  • 2 tablespoons dill, finely chopped
  • 2 tablespoons finely chopped parsley
  • 1 Package fresh onions cut into slices (4 onions)
  • salt if necessary because of the cheeses
  • freshly ground pepper
  • cherry tomatoes for decoration
  • sprigs of parsley for decoration

Instructions
 

  • 1. Grease a 20x10 cm oblong mould.
    2. Spread parchment paper on the bottom and the two large sides.
    3. In a bowl, combine the sifted flour, baking powder, salt and pepper.
    4. Beat the eggs in a mixer until they become fluffy.
    5. Add the olive oil and milk alternately with the flour.
    6. Stir briefly until the ingredients are incorporated.
    7. Add the onions, herbs and cheese and mix with a spatula.
    8. Decorate the surface with parsley and cherry tomatoes cut in half to create flowers or whatever you like.
    8. Place in a preheated oven at 180oC and bake for 40-45 minutes.

Notes

  1. You can use whatever cheese you have in the fridge
  2. Add a little milk if the mixture is too thick.
  3. This bread is eaten at all times, cold or hot, at breakfast with an omelette or as an accompaniment to a soup.
  4. The decoration can be made with fresh parsley and cherry tomatoes or dried tomatoes.
