Orange, lemon and ginger marmalade

Ingredients
- 1 kilo oranges
- 4 plots lemons
- 2 mugs Water
- Sugar
- 50 grams ginger optional
Instructions
- 1.Wash the oranges and lemons and remove the peels with a sharp knife. Bring them to a boil, changing the water 3-4 times. When they are cool, cut them into thin strips. Keep them aside. 2.Put the flesh of the oranges and lemons in a saucepan and a cup and mash them with a hand blender. Pass the pulp through a strainer to get a smooth pulp. 3. Pour the pulp into a stainless steel pot and add it to the pot. Boil for 10 minutes, let it cool down and count how many cups of pulp there are. 4. Add the sugar - if you like sweet jams, put as many cups of sugar as the mash. If you like your marmalade less sweet put 1 cup less sugar than the mash (3:4). 5. Add the grated ginger and mix. 6. Bring to a boil, first over high heat and then lower the heat. 7. Remove the foam that forms with a slotted spoon. Boil for about 45 minutes and test if it has set. If ready, put it in sterile jars.
Notes
The test is done with a small saucer that we put in the freezer for a few hours. Take a spoonful of jam and spread it on the chilled saucer. Draw a line with your finger. If this line is maintained, your jam is ready. If it comes together we must continue to boil.
