Ingredients
2grated zucchini
1grated carrot
4eggs
60mlolive oil
200gram.mixed cheeses
250gram.flour for all uses
2teaspoonfuls of shorteningbaking powder
1teaspoonbaking soda
100mlmilk or yoghurt
1 tablespoon poppy seed(optional)
1/2 munchiesdillfinely chopped
salt
pepper
Instructions
1. Grate the zucchini on a grater, add a little salt and drain in a colander. 2. Grate the carrot on a grater.2. Squeeze the zucchini very well to remove all the liquid and place them in a bowl.3. Add the milk or yoghurt, olive oil, dill and cheese.4. In another bowl, sift the flour, add the baking powder and baking soda. Mix well.5. Add the zucchini and carrot mixture to the solids mixture and mix well. 6. Butter and flour an oblong baking pan and pour the mixture.7. Bake for 45 minutes at 180 degrees. Test with a knife to see if it is cooked,8. Remove the savory cake from the pan as soon as it cools down a bit.9. Cut and serve with a salad as a main meal or as a snack.
