Ingredients
500 gram.leekscut into rings
1onionfinely chopped
100 gram.olive oil
1cuplong grain rice
3tablespoonsdillfinely chopped
1lemonjuice
1litervegetable broth
salt
black pepperfreshly grated
Instructions
1. Heat the leeks to remove the leeks' spirit. 2. Heat the olive oil in a saucepan and sauté the leeks for a few minutes. 3. Add the finely chopped onion and continue sautéing until the onion is translucent. 4. Add the rice and stir until oiled. 5. Add the broth. You may need to add a little more stock during cooking. 6. Add the dill, salt and pepper. 7. Cover the pot with the lid and boil the food for 15 minutes. The rice should not get muddy. 8. Add the lemon juice, cover again and leave for another 5 minutes. 9. Turn off the heat, remove the pot from the heat and cover it until the liquid is absorbed. 10. Serve the prasoryzo lukewarm, sprinkled with chopped dill and freshly ground pepper.
Notes
- If you don't serve the prasoryzo to children, you can add a shot of wine before adding the broth, bring it to a boil to evaporate the alcohol and then add the vegetable broth.- Steaming or blanching is a method in which vegetables are dipped in boiling water for a short time and then in ice water. - If you don't like lemon you can add grated tomato or tomato juice.
