Cake with bananas

A delicious cake that hides ripe banana pieces inside and will accompany a steaming cup of coffee or tea, ideal for a delicious morning start. Every bite brings back memories of homemade baking and unforgettable smells and tastes.

Equipment

  • 1 oblong cake tin

Ingredients
  

  • 140 gram. butter
  • 200 gram. granulated sugar
  • 2 eggs
  • 3 bananas (about 200 gr.)
  • 280 gram. self-rising flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon Cinnamon Powder
  • 1/4 teaspoon clove powder
  • 150 gram. coarsely chopped walnuts
  • 1 pinch salt

Instructions
 

  • 1. Preheat the oven to 180ο.
    2. Butter and flour a cake tin.
    3. Mash the bananas with a fork.
    4. In a bowl, combine the sifted flour, baking powder, baking soda, salt and cinnamon.
    5. Beat the butter and sugar in a mixer until light and fluffy and add the eggs one by one.
    6. Add the bananas and walnuts and mix.
    7. Add the flour gradually and mix until you get a homogeneous mixture.
    8. Pour the mixture into the pan and bake at 180° C.ο for 40 minutes.
    9. When it is ready, remove it from the oven, let it cool for 10 minutes and remove it by placing it on a wire rack to cool completely.
    10. Garnish with fresh banana and icing sugar.
     
     

Notes

1.To check if the cake is ready, pierce it with a thin skewer and if it comes out clean, the cake is cooked.
2.Open the oven for testing after 30 minutes of baking.
3. You can replace the white sugar with brown sugar and the butter with olive oil or vegetable oil in the same quantities as in the recipe.
