Vasil pie

The history of the Christmas cake is lost in the depths of the centuries, but it still retains its symbolism, which is the wish for luck, health and love! Each region of Greece has its own recipe, with yeast, like a cake, grated. My own memories are hiding Vasilopita with yeast, but I would like to give you a Vasilopita recipe that you can make all year round and serve it like a cake. It's easy, delicious and fragrant! Try it!

Equipment

  • 1 mixer
  • 1 cake tin28-30 million.
  • 1 squeegee

Ingredients
  

  • 500 gram. flour
  • 1 Envelope baking powder
  • 5 egg yolks
  • 5 egg whites
  • 400 gram. granulated sugar
  • 250 gram. butter
  • 250 gram. orange juice
  • 1/2 teaspoon baking soda
  • 70 ml brandy (1 cup of coffee)
  • 1 pinch salt
  • ½ teaspoon cinnamon
  • 1/4 teaspoon vanilla

Instructions
 

  • 1. Separate the eggs.
    2. Sift the flour and add the baking powder, cinnamon and vanilla. Mix well.
    3. In a mixer, add the butter and sugar. Beat well until you get a fluffy mixture.
    4. Add the yolks one by one, beating them well.
     5. Dissolve the soda in the orange juice.
    6. Add the flour alternately with the orange juice and brandy.
    7. Beat the egg whites with a pinch of salt until they become a stiff meringue. Add them to the mixture, stirring gently so they don't lose their air.
    8. Lightly butter a 28-30 cm baking pan and spread a sheet of parchment paper.
    9. Pour the mixture into the baking pan and add the coin.
    10. Bake the cake in a preheated oven for 45 minutes.
    11. Sprinkle with icing sugar or decorate according to your taste

Notes

  1. It is preferable to cook it on the resistors up and down to 180 degrees. When baking in the air, there is a risk that the outside will cook faster and the inside will remain uncooked.
  2. To see if the cake is cooked, test it in the classic way we all know, by piercing the cake in the centre with a straw or a toothless knife. If they come out then the cake is ready. 
  3. Do not open the oven until 30 minutes of baking time have elapsed.
  4. When it cools down well, wrap it in plastic wrap. This way it will keep for several days.
  5. If you have leftover pieces you can put them in the freezer
  6. All our ingredients must be at room temperature.
