Vegetable cubes

Vegetable cubes are a simple preparation containing vegetables and herbs. All you have to do is cut the vegetables of your choice, boil them and mash them. They contain no preservatives and are used in almost all culinary creations. It is possible instead of putting the mixture in ice cube trays, you can spread it on a baking tray and dry it in the oven on a low temperature. That way you'll have vegetable powder!

Equipment

  • 1 saucepan
  • 1 blender
  • 1 kitchen towel
  • 2-3 ice cube trays

Ingredients
  

  • 2 courgettes cut into cubes
  • 1 onion cut into cubes
  • 1 Homepage garlic
  • 2 diced carrots
  • 1 Root celery cut into cubes
  • 1 tablespoon finely chopped parsley
  • 1 tablespoon dill, finely chopped
  • 1/2 cup olive oil
  • 2 cups boiling water

Instructions
 

  • 1. Clean and wash the vegetables and cut them into small cubes.
    2. Drain them and dry them with a kitchen towel.
    3. Finely chop the parsley and dill.
    4. Heat the olive oil in a saucepan and sauté the onion,
    5. add the potato, carrots, celery and garlic.
    6. Add the parsley, dill and salt.
    7. The total time needed is 15-20 minutes.
    8. Add enough water to cover the vegetables.
    9. Cover the pot with the lid and let them boil until they soften. Add a little more water if necessary.
    10. When they are ready, mash them with a stick blender or in a moulinette.
    11. Put the mixture into ice cube trays.
    12. Once the mixture has cooled, place it in the freezer overnight.
    13. The next day, take them out of the cases and store them in the freezer in a food bag.
     

Notes

The vegetables are sautéed starting from the hardest.
